About the Chef - Sascia Marchesi

Chef Sascia Marchesi brings 23 years of food related experience to his position as Donatoni’s Restaurant Chef. Marchesi previously served as executive chef at Nicola’s ristoranto italiano in Plano and Dallas, Texas and as executive chef at Alfredo, the original Roma at the Epcot Center Walt Disney World in Orlando, Florida. From 1997 to 2001, Marchesi was the executive chef at Hilton Waikoloa Village’s Donatoni’s Restaurant where he was awarded best manager of the quarter for 1998.

Marchesi’s top priority is to achieve 100% customer satisfaction and to provide an authentic Italian cuisine dining experience complete with taste, variety and presentation. His favorite kitchen tool is his hands, and his most triumphant signature dish is risotto prepared in almost any manner.

Over the years he has participated in several special events including food shows and television programs on ESPN, FOX, and NBC networks. His achievements shine through his list of accreditations including awards from the Michelin Restaurants guide and Dallas Morning News just four months after opening Nicola’s ristoranto italiano.  Marchesi explains that he achieves success by implementing persistency and passion in everything he does.
                             
“I grew up in Milan and so my cuisine is Northern Italian,” stated Marchesi, whose mother has been the owner and chef of a successful restaurant in Milan for over 35 years. “Seeing my mother cooking in our family restaurant interested me in becoming a chef,” Marchesi continued. 

It was this restaurant where Marchesi was first introduced to the culinary world when his mother recruited him to the kitchen at age 14 to help clean vegetables.

Marchesi enjoys boating, motorcycling, and spending time with his wife and daughter. He currently resides in Waikoloa, Hawaii.
