A brand-new Italian restaurant and bar, with seated dining overlooking the pizza kitchen and a grab and go area for guests in a hurry.

Born and raised in Sicily, with restaurant chef experience in Florence, Venice and Rome, Chef Gino Cipriano cooks up kiawe wood-fired pizzas, family-style pastas, locally-sourced salads and creative Italian specialties.

Located at Hilton Waikoloa Village. Take advantage of complimentary valet parking during your meal. From the Main Lobby, take the tram two stops to the right, to Palace Tower. At Palace Tower, exit the tram to the right, then take a short walk back in the direction of the lobby. NOTE: If walking from the Main Lobby, pass the first Nui entrance (take-out only) to the Main entrance around the corner.

At Nui Italian, diners are treated to an authentic, family-friendly experience. This all-new restaurant features spacious open-air dining, with the pizza oven serving as a focal point with its decoratively-tiled, open wood-flame oven where kiawe wood-fired pizzas will be hand-crafted in full view of guests. In addition, families are invited to great food and company in the indoor lounge, or to enjoy their meal in the light and airy garden area.

Chef Gino Cipriano

At the helm is chef Gino Cipriano, who crafts Italian favorites from the freshest locally-sourced ingredients. Hailing from Sicily, Cipriano brings his Italian roots to this new restaurant. Cipriano spent the start of his career exploring the nuances of Italian cuisine, serving in resorts from Venice and Florence to Taormina and Rome. He continued his career in both Paris and the U.S. at notable resort restaurants in Miami and San Francisco.

Pizza Production

Did you know? Roman pizza production is a delicate process. We use flour imported from Italy, mixed with a specific temperature of water and yeast in a 4 hour process to create a dough that is aged for 72 hours, then delicately folded into rectangular pans and baked at over 600 degrees to create a unique, sought-after bubbled texture. Special trainers from Italy and Pittsburgh were flown in to ensure the quality of the production. Nui Italian is the only restaurant on the island to use this process. Enjoy the Menu Single or Family Style

Nui Italian features fresh-baked pizzas, including a challenge to “build your own pizza better than chef Gino!” Chef-inspired pizzas include roasted chicken and mushroom, classic margarita with buffalo mozzarella, and spicy Italian sausage with tomatoes. In addition to fresh pizzas, guests enjoy salads, pastas, and signature entrees served in both single and family style portions. Highlights include shrimp scampi linguine, fresh catch from island waters, and grilled ribeye.

Drinks to Enhance to Experience

The bar features cocktails that are light and refreshing using local craft spirits and Hawaiian tropical fruits. Chianti and pinot grigio are available in carafes by the half and full liter, while a full list of wines by the glass and bottle highlight guest favorites and Italian selections.
